Aging beer, like wine, is a tricky and delicate process. It hinges primarily on oxygen content: the less oxygen, the better, as it slows the oxidation process, which can cause a beer’s natural flavors to deteriorate rapidly. When aging beer, then, brewers tend to think about temperature and light, which can also expedite oxidation.
Unless you’re Vince Desrosiers, head brewer at Dock Street in Philadelphia, that is. In which case, you’re thinking about the RZA, the GZA, Method Man, Raekwon, and ODB. Philadelphia magazine reports that Desrosiers will expose his latest beer to a 24/7 stream of Wu-Tang Clan’s music on Spotify for the next six months. The beer will have hints of pineapple and orange, and will be christened “Ain’t nuthin’ to funk with,” after a track on Wu-Tang Clan’s eponymous 1993 debut album.

Desrosiers acknowledges the gimmicky nature of brewing a beer with music, but he began taking it more seriously when once he began the process. “It started as a joke,” he said, “and then we wondered if the bass would cause enough vibration to move the yeast around and create some different flavors during fermentation.”
“I listen to music every day in the brewery and I’ve wanted to do a series of beers based on the music I like,” he continued. “It’s hardly an original thought but my musical taste is all over the place and Wu Tang seemed like a great place to start.”
